Mash is loved by almost everyone. Its something thats easy to knock up for the kids and delicious when cooking a dish with lots of sauce. This is my recipe for butterbean mash which gives you all the yumminess of mash potatoes but without the carbs (my kids can’t even tell the difference).
Ingredients:
Leek x 1
Butter x 50g
Tinned Butter beans x 2
Water x 150ml
Prepare the leeks by slicing them up any way you like. Cook them with the butter slowly so they are cooked through. Drain the tinned butterbeans and add to the cooked leeks with the water. Blitz the beans with a hand blender until smooth. Season to your taste and voila, creamy butterbean mash. This literally takes 5 minutes to make.
