A great recipe I use to go with almost any meat dish. I have made it without the Chorizo for my veggie niece by just adding smoked paprika to the potatoes whilst cooking and she liked it (probably just happy I made an effort on a vegetarian dish). Just be careful on not adding too much paprika as it can be overpowering.
Roughly chop sweet potatoes
Run with sunflower oil and add 1 or 2 quarters of red onion (get a red onion, chop it into 4 and remove the outer layers).
Roast for 20 min at 180
Roughly chop some chorizo and add this to the sweet potatoes. Cook for a further 20 min until everything is crispy and cooked through. The chorizo give the dish a lovely flavour.
In a separate bowl add a chopped red chilli, a can of black beans an pour in your hot sweet potato mix. Garnish with chopped coriander.
