In the need to offer a dinner that can be cooked in advance I often cook chicken thighs which have been marinated (sometimes not for very long). I usually add to the a salad and a slow cab dish:
Chicken + Salad + Lentils/Sweet Potatoes/Beans
Chicken Jamaican Style:
Ingredients
Rub jerk spices
Sunflower Oli
Salt/Pepper
Salad – Anything thrown together
Sweet Potato, Chorizo & Black Beans
